Generous sprinkle of...1 to 1-1/2 lbs. fish fillets <br />Generous sprinkle of salt and pepper on both sides of fish <br />2/3 cup of finely ground corn meal <br />1/3 cup of all purpose flour <br />1-1/2 inches of fat or vegetable oil or corn oil <br /><br />Makes 4 servings <br /><br />Mix corn meal and flour. Sprinkle salt and pepper on both sides of fish generously. Dip fish into cornmeal/flour mixture or shake fish filets with mixture in a brown paper bag. In deep iron skillet, heat 1-1/2 inches of fat or oil to 370 degrees F. Or hot enough to fry bread. Immerse fish in hot fat or oil. Fry quickly until browned on both sides. The fish should be flakey but moist. This will take about 3 or 4 minutes, depending on size of fish. Drain on paper towels. A one piece would have been sufficient but the two piece meant I would not be looking for a snack later on. The $22 three piece would have easily fed both of us and that is what we might do next time. "Crumb fried", that is the term I was looking for and I still remember that all you can eat catfish restaurant in Texas!<br /><br />Dee, do you have a favorite recipe for that crumb / corn meal coating? By the photo, that looked like enough halibut to feed two, maybe three people. I'm sure you (as skinny as you are) was stuffed. We call that crumb fried if the fish is not battered. But we throw in a little corn meal with the thin coating, especially when frying fresh water catfish. You did get a lot of bang for your buck.
