Time Out

We have been taking it easy! Things are winding down around here as we start thinking about getting ready for the winter. Norma's garden is starting to put itself to sleep as the nights get cooler and the days shorter. She fought it for a while but has now resigned herself to focusing on a few flowers and her tomato plants which are producing tomatoes far faster than we can eat them.

We got a call last night from our old NDP organizer friend, Gerry Scott who said he was coming up here to deal with the local election campaign. He asked if we could put him up for a few days to save the Party some hotel money and of course we can. We have known Gerry since the late 70's and have a lot of catching up to do. Gerry was the organizer responsible for the NDP victory in Alberta. He thinks he will be here tomorrow but as always in politics, things can change at the last minute!

  1. Too many tomatoes? Quarter them, toss them with salt, pepper, garlic, some capers and basil, then bake in the oven at 265F for two hours or until dryish. Just like sun dried, great on pizza, or a sandwich.

  2. Or slice them very thin and put on parchment paper with sprigs of thyme and oregano and slivers of garlic and a sprinkle of olive oil, salt and pepper. Even when they get crispy around the edges they are delicious. Oh I do miss my tomatoes.....

  3. I love them! Last night I cut up three of them in chunks, mixed them with two coarsely chopped onions, drizzled on some olive oil, added some spices and baked. Oh wow! I used the leftovers under poached eggs this morning to try to match a dish we had in Guanajuato, Mexico a few years ago. If the onions had been chopped finer, it would have been perfect, as it was it was only delicious! I think the ones in Mexico were actually poached in the mixture. I will try that next time.
