This was my masterpiece tonight. Not bad if I must say so myself! Can’t wait to pass through Veracruz to enjoy their copy of it…
You're a luck man John Calypso! You live there.
This Blog was created to chronicle our travels in Mexico but has since morphed into something else entirely. Our periodic Mexico travels are still in here but if that is why you came here, you will have to dig a little to get to it. Try searching the Blog Archive in the right hand column.

I wish I liked olives. :( If it weren't for them, the dish would look divine. That fish is beautiful!
ReplyDeleteLots of olives in this one but not really necessary. Pretty easy to make. The sauce has to reduce twice to give it that great flavour.
ReplyDeleteYou too could live here Amigo - the door is open and the fish are fine Veracruz style.
ReplyDeleteLeave out the olives and I bet this is a 'lick the plate' type of dish! I love firm, flaky white fish in tomato sauce.
